By the end of the 14th century, the coffee began to be roasted in a pan over. The time has passed and now the most used system is the spin cycle of the grains in a hot air chamber.
In this process, the grain loses water and sugars, and starches become into oils. There are the coffee aroma and flavor essences. In addition, the grain grows and changes its appearance to a characteristic toasty brown color. The longer the roasting time, the darker the grain color.
The average roasting time is in between 10 to 20 minutes and the temperature is in between 400 and 425 º F.
